Lime and Coconut Energy Balls

I am so glad that energy balls are really widely available now but they can be expensive and quickly add up. Making them at home is incredibly easy and it's also very reassuring having a stocked up fridge full of snacks! I adore citrus desserts - lemon tart, raspberry coulis are amongst my favourite desserts. With these energy balls all the fresh zesty taste of the lime comes through and there's enough sweetness to feel like a treat. 

If you are making them for children I would advise using desiccated coconut or thoroughly blending it before serving. 



Lime and Coconut Energy Balls

200g cashew nuts
180g Medjool dates
2 tablespoons of lime zest - save the limes for juicing. 
1 tablespoon of Maca powder
2 tablespoons of desiccated or shredded coconut
1/2 tablespoon of melted or soft room temperature coconut oil


1) In a food processor blitz the cashew nuts and maca for about 20 seconds until they are all broken down. Add the dates a few at a time and blend well.

2) Add 1 teaspoon of room temperature coconut oil and when blended add the lime zest and cocount and blend for about 20 seconds.

3) Take small handfuls of the mixture and roll it between your hands to form small balls. 
Top with any leftover lime zest. 

Refrigerate for 20 minutes to allow the coconut oil to set.
Store in an airtight container in the fridge for up to a week.
