With Pancake Tuesday on the horizon I wanted to find a healthy vegan version. I've heard about Stevia and Coconut flour but had never used them before.
Dr. Coys is an Irish brand that produces such gorgeous chocolate but they also have a range of coconut flour, the nicest coconut oil and stevia. Michelle in there is a serious foodie and all about healthier options so she came up with this recipe that uses all three.
In case you're wanted a little bit more information on why we wanted to use them it's all below:
Coconut flour is high in fibre, adding an instant nutritional boost to recipes, as well as ensuring your end product is much more satiating. It’s a much healthier option for those with blood sugar issues seen as the energy offered is slower releasing. As it is derived from coconut it also retains some of its medium chain fatty acids, noted for their antimicrobial, antiviral and antifungal properties.
When it comes to using coconut flour it is a little more tricky than simply replacing whole wheat flour in a recipe. It usually requires approximately ¼ of the amount, but really you just need to follow a more specific coconut flour based recipe or play around and experiment yourself.
Coconut oil is Michelle's prefered oil for cooking with because it is the most stable when brought to high temperatures due it being predominantly made up of saturated fat. This basically means that the fats are much less likely to become rancid at high temperatures. Coconut oil is known for being antiviral, antifungal and antibacterial; it really is an all rounder when it comes to health.
Dr.Coy’s coconut oil is extremely high quality, cold pressed, extra virgin and organic. Once you use it, it’s genuinely difficult to go back any other brand. The coconut scent and taste is natural, and not at all overpowering, and because it hasn’t been over-processed it retains much more of its inherent healing properties.
Stevia is calorie free, has no impact on blood sugar levels, is tooth friendly, vegan friendly and can easily be used to replace sugar in almost all of your recipes. It’s naturally 200-300 times sweeter than sugar so Dr.Coy’s use Erythritol, a sugar alcohol, to ensure that you can use it 1:1 in your recipes and don’t have to worry about any bitter after taste.
There are some other cheaper alternative stevia options on the market, but the vast majority are bulked out with maltodextrin. There are many different associated side effects, including bloating and overall digestive upset, as well as it actually having quite a strong impact on blood sugar levels. It can be digested as rapidly as glucose.
Vegan Coconut Flour Pancakes
Preparation Time - 10 minutes
Cooking Time - 10 minutes
Yield - 8 - 9 pancakes (Serves 2-3 people)
1 cup (120g) oat flour (grind oats to flour like consistency in your food processor or blender)
2 tbsp (15g) Dr. Coy’s Coconut flour
1 tbsp arrowroot powder
2 tsp baking powder
Pinch of Pink Himalayan Rock Salt
1/2 teaspoon cinnamon (optional for natural sweetness)
375ml (1.5 cups) unsweetened almond milk
1 tbsp dairy free yogurt, coconut or soy
2 tbsp Dr. Coy’s Stevia
1 tsp pure vanilla extract
1 tbsp (14g) Dr. Coy’s coconut oil for cooking
Coconut Whipped Cream, from the top of a can of full fat coconut milk refrigerated overnight for garnish, sweetened with some Dr. Coy’s
To serve...Berries, Maple Syrup, Toasted Coconut Flakes, Chia Seeds, Cacao Nibs…
Blend together all batter ingredients in a blender or in a large jug using a hand blender. Be sure to create your oat flour first or just buy oat flour! You can buy gluten free oats or gluten free oat flour to keep this recipe gluten free.
Melt ⅓ of the coconut oil in a 10 inch non stick pan. Pour ¼ cup measures of the batter into the pan once the oil has melted and the pan is hot.
I cook three pancakes at a time! Cook for a couple of minutes until bubbles appear and then flip and cook for a couple of minutes more. Repeat with remaining batter melting coconut oil in the pan as you go!
Keep pancakes warm in a warm oven or these can also just simply be reheated in the microwave!
Serve with toppings of choice!
