3 Vegan Sauces to Pair With Eden Foods Burgers & Bites*

At the weekend I tend to take my time with cooking but mid-week I’m usually either time stretched or tired and looking for a healthy quick fix for dinner. Vegan options with natural ingredients prepared in a healthy way can be surprisingly difficult to find so I was delighted when I got to sample the new range form Eden Foods.

Eden is a brand new, sustainably sourced, chilled food brand, which has introduced a delicious range of five vegan and vegetarian friendly burgers and bites which are all proudly produced in Ireland and are steamed rather than fried ensuring a flavoursome, honest and better tasting meal option.

I’m a huge hummus fan and have recently been making lots of vegan mayo - with chickpea water - a revelation even my dad couldn’t tell it from traditional mayonnaise and they pair so well with the Eden Burgers and Bites.

I thought I would share 3 of my favourite dips and how they pair with the Food range below:

This is the perfect accompaniment to any burger. I added some rocket and avocado to the Garden Vegetable Burger.

  • 2 tablespoons of Aquafaba - the liquid from a can of chickpeas.

  • 1 tablespoon of Apple Cider Vinegar

  • 1/2 teaspoon of Salt

  • 1/2 teaspoon of Mustard powder

  • 3/4 cup /180 ml Rapeseed oil


Place the first 4 ingredients into a blender and switch it on.

Allow to blend for 30 seconds and then pour in the oil while the machine is still running in a slow steady stream.

Allow to process for a further 1 minute. It should all come together into a thick sauce exactly the same texture as traditional mayonnaise. Store in the fridge for up to 1 week.

This was absolutely delicious with the Curried Cauliflower Burger which is a blend of cauliflower, sweet potato, turmeric and spices. It’s really satisfying and full of flavour.

  • 4 cloves of roasted garlic. You will need to roast a whole head of garlic.

  • 1 can of drained and rinsed butterbeans

  • 1 tablespoon of tahini

  • 1 tablespoon of lemon juice

  • Salt and Pepper to taste

  • 2 tablespoons of olive oil

  • 2 tablespoons of water.

First roast your garlic.

Slice off the top each head of your garlic to expose some of the cloves inside. Place it on a piece of tinfoil or baking paper and drizzle with olive oil and wrap in the foil up to seal it. Place in the oven and roast until cloves are lightly browned and tender, about 30 minutes at 200*

Your roasted garlic should pop easily out of their skins. Store the rest in the fridge for up to 3 days.

Pour all ingredients except the water into a blender and pulse until well combined.

Add the water until you have reached your desired texture.

Season to taste.

This worked so well with the two beetroot options. The colour contrast of the bright yellow turmeric and the beetroot is so appetising as well. The Beetroot and Kale Burger consists of coarsely chopped red kidney beans and chickpeas added to kale and beetroot to form an earthly, vibrant patty. The Beetroot and Kale Bites are made with coarsely chopped red kidney beans and chickpeas and make a perfect snacking option or side dish.

  • 1 x 400g tins of chickpeas, drained and well rinsed in cold water.

  • 2 tablespoons olive oil

  • 1 tablespoon of lemon juice

  • 1 heaped tablespoons tahini

  • 3 cloves of garlic, peeled

  • 2 teaspoons ground cumin

  • 1 teaspoon of turmeric

  • 200 ml of filtered water.

  • salt and pepper

Blend all of the hummus ingredients in a food processor. Pulse in the water until you required consistency is reached. Season well and add a final drizzle of olive oil once ready to serve.
